Egg Roti – Delicious Sri Lankan Street Food

1st Step : Make the dough for rotis

You will need :

 All purpose flour  2 cups
 Salt  1/2 tsp
 Olive oil (Any cooking oil would do)  1 tbsp
 Sugar  1/2 tsp
Baking powder  1/2 tsp

Knead it :

  • Rub flour, sugar, salt, baking powder and oil together
  • Add lukewarm water little by little and knead for about 5 – 8 mins until the dough doesnt stick on to your fingers
  • Divide into equal sized balls giving an extra kneed to each ball
  • Rub oil on each ball.  Place on a tray a little apart from each other
  • Cover with a wet tea towel or a cling film and let them rest at least 2hrs


Make the egg mixture:

You will need : Eggs, chili powder, onion and salt

  • Beat 3 eggs in a bowl, season with salt and keep aside.
  • Take a dough ball out and flatten it by carefully stretching from the sides
  • Heat a flat pan, spray oil and place the stretched out roti on it
  • Pour some of the egg mixture on the roti
  • Throw a handful of chopped onions, chili powder and salt.  You can add a chopped green chili for a spicier taste
  • Cover and cook for a minute
  • Fold the egg roti in half
  • Cover and cook further until both sides are well cooked
  • You can cut the egg rotis into equal size triangles and serve with ketchup for kids.
  • Serve them for adults with a steaming cup of plain tea with ginger pieces floating on top.

Eggy bread – Crispy golden bread, wrapped with eggs

eggy breadThis is an ideal, insanely-simple snack for kids; they simply love the outer crispiness and the soft sponginess in the middle of  this eggy bread.  For them, this is a filling as well as a healthy snack choice or a proper dinner meal.  Even for us, adults, this is a very satisfying light meal, perhaps, along with some stir fried mushrooms, steamed veggies –  or just on its own.

You will need only 3 ingredients to make 3 eggy bread potions :

  • 3 Eggs
  • 3 slices of bread
  • Butter, salt and pepper

Let’s make it:

  • Whisk an egg in a bowl and season with salt and pepper powder.
  • Butter one side of a slice of bread.
  • Heat up a non-stick pan and place the buttered side down  and leave for a few seconds.
  • Add the egg mixture on to the top, letting it to run on the bread slice and around the pan.

  • Close the lid and cook under medium flame for a minute
  • Open the lid and check if the bottom side has turned golden brown. If not, close the lid and let it cook for another min
  • Flip over
  • Cover the lid and cook the other side
  • The egg will swell and becomes puffy once properly cooked
  • Open the lid and fold it in half
  • Serve immediately with Ketchup
  • Repeat the same steps on other bread slices too
  • Enjoy!
